If you have been looking for South American dining nearby, your wait ends very soon.

Fish Head Restaurante & Cantina plans to open within a week at 816 Sheridan Road in Highwood across from The Town of Ft. Sheridan offering South American Latin fusion fare, according to Robert Viteri of Wilmette, one of three owners.

“We’ll have lots of seafood,” Viteri said. “We’ll have steaks and chicken too.” Most of the dishes will be under $20. “There may be one or two (over $20).”

One dish—either an appetizer or main course—which will be plentiful is ceviche. “We’ll have one with Peruvian fish, (another with) Ecuadorian shrimp and one with clams,” Viteri said.

Joining Viteri as owners are Rodrigo Zurita of Skokie and Michael Viteri of Chicago. Patch plans to get there soon after opening and give you a report.

Sounds like a must-try. Hopefully they are either no or low corkage, too.

The restaurant does have a liquor license. Sorry I forgot to put that in the story.
