Potbelly Sandwich Shop

A potbelly stove is a 19th-century invention, made of cast iron, conceived for heating purposes. Supposedly, this pudgy objet d'art became the inspiration of Peter Hastings for his eatery in 1977. Hastings, an antiques dealer, began to boost his business by making sandwiches for customers--and the sandwiches prevailed over the antiques.

Highland Park's Potbelly, along 2nd St., is one of 10 in the North Shore area, and more than 200 in the Midwest and beyond. Despite its rapid growth, it still bears the same logo and homey feel. The Italian sub and the Wreck--originals from 1977--are still served. Also available are a chickpea veggie salad and chili soup, among others. The restaurant is air-conditioned and spacious.
